Meet the Dietitian
Cory Eakins, MS, RDN, LDN was named the Nutrition Coordinator for WKU in May 2019. Eakins graduated from the University of Kentucky in 2013 with a Bachelor of Science degree in Dietetics and completed the coordinated program’s dietetic internship. He returned to the University of Kentucky to complete a Master of Science degree in Nutritional Science with an emphasis in Sports Nutrition and Wellness in 2015.
Eakins uses a food first approach in order to help students through one-on-one counseling,
individualized meal plans, nutrition education, group presentations, grocery shopping
tours, and cooking demonstrations. Eakins takes a ‘food is fuel’ attitude with the
student athletes at WKU using the TopFuel sports nutrition program. In addition to
these responsibilities, Cory helps students with food allergies navigate the campus
dining locations with allergy friendly menu options.
