Kelci Murphy, RDN, LD
Kelci Murphy, RDN, LD was promoted to Nutrition Associate Manager for the WKU Restaurant Group in July 2022 after serving for less than 1 year as the Nutrition Coordinator. Kelci earned her Bachelor of Science degree in Hospitality Management and Dietetics from Western Kentucky University and went on to complete her dietetic internship at Southern University and A&M College in Baton Rouge, Louisiana. Kelci has practiced as a Registered Dietitian Nutritionist since 2016 in outpatient nutrition counseling, community and corporate wellness, behavioral health, and in the hospital. While she has a variety of experiences, Kelci's passion lies within her one-on-one counseling sessions and group education classes. She takes a flexible, non-diet approach to nutrition to help students cultivate sustainable habits and achieve their health goals. Kelci is available to students and student athletes seeking 1:1 nutrition counseling, nutrition education, group presentations, cooking demonstrations or grocery store tours. She is also available for those with special dietary needs, including food allergies or celiac disease, who need guidance dining on campus and allergen-friendly menu options.

Amber O'Callaghan, RDN, LD
Amber O’Callaghan, RDN, LD started working as Nutrition Coordinator for the WKU Restaurant Group in June 2024. Amber earned her Bachelor of Science degree in Food & Nutrition and Dietetics from Tennessee State University and went on to complete her dietetic internship with National HealthCare Corporation. Amber has practiced as a Registered Dietitian Nutritionist since 2022. She brings valuable experience from her previous position as Director of Food & Nutrition Services at a long-term care facility. With a background in creating personalized nutrition plans and promoting healthy eating habits, she is committed to supporting the WKU community in achieving their wellness goals through education and guidance. Amber is excited to contribute to a healthier campus environment and empower individuals to make informed choices for their well-being. Students and athletes can schedule personalized nutrition counseling sessions to address their specific dietary needs and preferences to develop a nutrition plan that aligns with their goals and lifestyle.
